How about starting your work week with Muffin Monday? Monday or any day, this recipe is a merging of two favorites — banana bread and chocolate chip cookies!
Chocolate Chip Banana Muffins 3/4 C sugar 2 T applesauce 6 T unsalted butter, melted 1-3/8 C all-purpose flour 1 C (about 3) mashed overripe bananas 1-1/4 tsp baking soda 1 egg 1/2 tsp salt Preheat oven to 350 degrees. In large bowl combine sugar, melted butter, bananas, egg and applesauce; mix thoroughly. In medium bowl, whisk flour with baking soda and salt. Add the dry ingredients to the wet ingredients and whisk until the batter is evenly moistened. Stir in 1/2 cup mini chocolate chips. Spoon the batter into 12 paper-lined muffin cups. Bake for about 26 minutes or until a toothpick inserted in the center of the muffins comes out with a few moist crumbs clinging. Let the muffins cool for 10 minutes before turning them out onto a rack to cool completely. Yield: 12 muffins
